I got the idea for this recipe from my friend Chelsea Dillon (Dublin, Republic of Ireland). She made us a delicious strawberry, rhubarb cobbler on Thanksgiving, and it was lick your bowl good. Since my kids have decided to love one type of food one week, and hate it the next, I usually end up having fruit that's about to go bad...so I thought...let's cobbler this baby!
1 bag frozen mixed fruit
2 large pears
2 stalks rhubarb
1/2 slice lime juice
3 Tbsp. white sugar
2/3 c. oats
1/2 c. flour
1/3 c. brown sugar
1/2 c. salted butter (room temperature, do not melt)
1/3 tsp. almond extract
(a tiny pinch of cinnamon and/or nutmeg to make more Christmas-y)
1) Preheat the oven to 350°F (180°C). Put the frozen fruit into the sauce pan, dice pears and rhubarb and add to pan, now add lime juice and white sugar. Simmer for 10 minutes or until mixture has completely thawed.
2) Prep the crust. In a medium bowl mix the oats, flour, brown sugar, salted butter, and almond extract. Pinch the butter between your fingers into the dry ingriendents. I use my hands to make sure I have a decent amount of crumbly bits to cover the berry filling.
3) Transfer the berry mixture into a 6x10 or small casserole dish. Bake for 15 minutes, pull out of the oven, add crumbles. Place back in the oven and cook 30 minutes.
**Add a scoop of vanilla ice cream, or if you want to make it EXTRA special top with Baileys Extra Thick Cream...Oh-MAH-GAH!...it's insanely good!!
